My girls LOVE cupcakes. But when I realized I had to go gluten-free and my daughter was already dairy free, we had a problem. All of our favorite cupcakes had wheat or dairy in them. Enter the Paleo diet! These coconut flour Paleo cupcakes are amazingly simple and delicious. I love them glazed with a bit of coconut oil and honey icing. Delicious.

Vanilla Coconut Flour Paleo Cupcakes
Makes 12
Ingredients
1/2 cup coconut flour
1/4 teaspoon Celtic sea salt
1/4 teaspoon baking soda
6 large eggs, room temperature
1/2 cup coconut oil
1/4 cup honey
2 tablespoons coconut milk
2 tablespoons vanilla extract
Glaze ingredients (optional)
1/4 cup coconut oil
2 tablespoons honey
1 tablespoon coconut flour
Method
Preheat oven to 350 degrees Fahrenheit.
Combine dry ingredients in a food processor.
Add in wet ingredients while pulsing, continue until just combined.
Scoop about 1/4 cup of batter into each muffin well.
Bake at 350 degrees Fahrenheit for 20-25 minutes.
Let cool.
Heat coconut oil and whisk in remaining ingredients.
Glaze cupcakes and let cool.
