Ch-ch-ch-chia is an amazing tool for thickening jams and puddings. This nearly instant chia pudding recipe is delicious, Paleo and kid-friendly!
Vanilla Chia Pudding Recipe
Makes about 3 cups
Ingredients
1 1/4 cups unsweetened coconut or almond milk frozen into ice cubes
3/4 cup unsweetened coconut or almond milk
2/3 cup chia seeds
1/2 teaspoon pure vanilla extract
2 tablespoons currants or chopped dried figs or dates
2 tablespoons unsweetened coconut flakes
Method
To make chocolate flavor, add cocoa powder to taste. With the ice, the chocolate flavor tastes a lot like a frosty without all the junk!
If you’d rather chill the pudding the regular way, skip the ice cubes and add the same amount in unfrozen coconut/almond milk. Chill in the fridge until thickened.
If your dates are firm, soak them in hot water for at least 30 minutes before you begin. Drain well.
